Hello, I'm Leland.

I grew up in a small town in rural Tennessee, where weekends smelled of cast-iron skillets and slow-cooked beans. My grandmother kept a kitchen garden that changed with the seasons, and some of my earliest memories are of shelling butter beans on the porch while she narrated the life story of every vegetable we'd planted together. That's where my love of food began — not in a restaurant, not in a culinary school, but in an ordinary kitchen where love was measured in heaped tablespoons.

After years of working in communications and living across three continents, I found myself returning again and again to the kitchen as a place of clarity. A stint in southern Spain introduced me to the slow patience of tapas culture. Time spent in Osaka rewired how I think about umami and restraint. Travels through coastal Morocco taught me that spice is never about heat alone — it's about depth, warmth, and story. All of those flavours live in my cooking now, woven together with the Southern American roots I'll never shake.

lelandbillyclarke is where I put all of that down in writing. The recipes here draw from Southern American traditions, Mediterranean simplicity, Japanese precision, and North African boldness — but they're always grounded in one belief: good food doesn't need to be complicated to be extraordinary.

I write every recipe as if I'm walking a friend through it in my kitchen. No unnecessary techniques, no obscure ingredients you'll use once and forget, no pretence. Just real food, made with intention, shared honestly. If something takes 45 minutes, I'll tell you it takes 45 minutes. If a substitute works just as well as the original, you'll hear about it.
